Lunch is usually a quick salad of left over protein from the night before tossed through
organic salad leaves with our sauerkraut and our cashew dip as a creamy dressing.
I enjoy salads, so I'll usually throw together a quick salad with avocado,
organic salad leaves, a few berries, and some protein (e.g., leftover roast chicken, poached eggs, or smoked salmon, canned tuna or sardines).

Salad (Semi-Raw) Ingredients: 3 cups spinach
leaves, shredded 1 cup Romaine lettuce, shredded 1/2 cup shredded
organic carrots 2 zucchini, shredded 1 cup of alfalfa sprouts 1 cup of broccoli florets 1/2 cup diced yellow bell pepper 1 cup red cabbage (chopped) 2 hard - boiled omega - 3 eggs (sliced) 2 ounces shredded
organic cheese Dressing Blend together 2
organic tomatoes, one peeled and pitted avocado, 1 celery stalk, and 2 carrots, 2 tablespoons mayonnaise, and a dash of Herbamare.
FRUIT
SALAD Favorite fruit chopped + 2 tbs Greek yogurt + handful raw nuts + handful oats + teaspoon honey or
organic maple syrup + lime juice and fresh mint
leaves.
For the
salad — 250 g new potatoes, cut the larger ones in half or smaller — 100 g French beans, cut into roughly 2 - 3 cm lengths — 2
organic eggs — 1 medium head of a lettuce (I used Salanova), lettuce
leaves washed and separated — small handful of black olives, pitted — salt, freshly ground black pepper
Salad: Two big handfuls of radicchio
leaves, washed, torn and spun dried 1 1/2 c. fresh
organic corn, cleaned, shucked and rinsed 1 c. cherry tomatoes, halved 1 avocado, halved, pitted and sliced 1/4 c. cilantro, washed and stems removed 2 Tbsp.
