I have read from
other gf bloggers that Tapioca starch (flour) can leave a bitter taste in breads.
there's been a lot trial and error - substituting half the garbanzo bean flour for
other GF flours, adding various amounts of oil and water and adding different herbs and spices.
I did many tests of this crust with
other gf flours, and the only successful run was with the inclusion with almond meal.
A tad chewy and does seem to stick together more than
other GF pasta, so be aware to stir it more while cooking.
I LOVE molasses cookies and have tried
other gf recipes that just haven't done it for me like my grandma's old fashioned ones.
My banana bread and
other GF treats no longer taste of grit and ground up grain, bland and unappealing.
If you can't stand being charged extra for that gluten - free bread, you'll relate to

Cassava usually holds up a lot better than
other gf flours without eggs.
The potato and tapioca are starches and the rice always needs to be accompanied by a starch or
other gf flour.
By adding oat flour, in combination with small amounts of
other GF flours and starches, it actually gave moisture and elasticity to the mix.
I tried a different nut butter since he's not a fan of the texture of
some other GF recipes that use almond butter, meal, or flour.
Both of these flours (and
other GF mixes) are not cheap so I tend not to want to do too much experimentation.

I made your crust from the pie in a bag to try it out for Thanksgiving and while it was better than
any other GF crust I've tried, it didn't have the texture I'm used to.

The water roux was a total game changer: rather than the usual dense and chalky texture of so many

I would suggest going by how the batter looks which should be thick but still pourable (like
other GF batters).
I have both your other books and have not had a failed recipe yet as I have had with
other GF cookbooks.
PS In most
other GF / dairy - free recipes, I have excellent success substituting tapioca starch or arrowroot powder for potato starch (depending on the balance of other ingredients), but I'm stumped when it comes to potato flour.

Elana, You're so right about the big difference between almond and coconut flour and some of
the other GF mainstays, especially the starches.
I have tried so many
other GF breads, and I am always disappointed and wonder why do I even try new ones when this is so good.

I've baked
other GF / low - carb breads and was always dissatisfied with the texture.
I keep trying to find a good ratio of
other GF types such as brown rice, coconut, quinoa etc..
Hard to beat for the price, as are
the other gf products at TJ's, unfortunately they don't sell wine here in CT..
The texture is just miles better than anything else out there in my opinion, and with the obstacle of cost removed (or at least reduced to the equivalent of
every other GF flour out there,) there's no reason not to use it in practically everything.
