I LOVE molasses cookies and have tried
other gf recipes that just haven't done it for me like my grandma's old fashioned ones.
I tried a different nut butter since he's not a fan of the texture of
some other GF recipes that use almond butter, meal, or flour.

I already have (and live by) your
other books, but the bonus videos /
recipes just show that you are once again, filling a void in an area where
GF people have not been able to enjoy common foods.
The best thing about this
recipe is its adaptability; omit the flour for a
GF option and experiment with
other spices and powders in the place of beetroot.
Maybe some don't view naturally
GF recipes as enough of a
recipe development accomplishment, or maybe it's simply that
others don't need to learn about naturally
GF foods and are only interested in the baking component (especially those who are more experienced).
You can use any
GF flour blend you choose, but I like Pamela's
GF Artisan Blend in this
recipe (and most
others.)
I have and LOVE both of your
other books and always recommend them to friends looking for awesome
gf recipes.
I love, love to bake and have been experimenting with using
GF flour in place of AP in all my
other recipes.
PS In most
other GF / dairy - free
recipes, I have excellent success substituting tapioca starch or arrowroot powder for potato starch (depending on the balance of
other ingredients), but I'm stumped when it comes to potato flour.
I have both your
other books and have not had a failed
recipe yet as I have had with
other GF cookbooks.

GF Whole Grain Flour Blend highly, despite that I haven't yet baked with it, on the strength of
other KAF
GF products that I have used with great success, AND your wonderful crew of on line bakers that have helped me with ideas,

gf coconut waffles don't include so many eggs that I usually see in
other gf coconut

It helps bind everything together — no
other GF flour is going to do that, so I'm guessing the
recipe wouldn't turn out nearly as well...: (She addresses this in a few of the
other comments... I usually order mine from Vitacost.com & they ship to Canada!
On the
other hand, more complex
recipes like breads, cakes & crusts require a few tweaks here & there... especially bread since
GF breads don't maintain structure the same way conventional bread does.
My son has been

I did a short rise before putting the dough in the fridge — with
other recipes, a first rise usually helps
gf dough toughen up a little.
