Like
the other breakfast cookies I have made, these will have more of a muffin - like texture which I think makes me like them even more!
I have made
other breakfast cookies with bananas as the main ingredient - not a huge fan... I had some ripe bananas and these were to easy not to try.

Since I am eating so many
cookies for
breakfast, the
other day I ran out of chocolate chips.
I love
breakfast around here, so try some of my

I'm hoping to make this
cookie or my

breakfast cookies that morning to give us some good fuel for the day.
So quick and simple, so filling and also good for you too... obviously if you don't go overboard with chocolate and
other sweeteners but then it wouldn't really be a
breakfast cookie would it!

I recently turned 3
other fiber - rich muffin recipes into muffin tops /
breakfast cookies (a la the commercially available BelVita
breakfast cookies by Christie).
I use the rolled oats almost every AM for
breakfast... if not cereal, it's waffles, or pancakes... I also use it in a flour blend for, oatmeal bread,
cookies, bars, cakes, and banana type breads... it's great... excellent price compared to
others and I've found it to be safe...

It can be used for

other meals, fed to very young children, and used to make
cookies!
They had processed high - sugar
breakfast cereals (heaven forbid they should actually cook some oatmeal), gallons of fresh milk (because powdered is «icky» and they won't eat it), cheese (that was a luxury we couldn't afford), frozen convenience foods, juice (which is much less healthy than fruit and expensive relative to nutrients), and soda, candy, donuts,
cookies, cracker, ice cream and
other treats we couldn't possibly afford.
I was thinking about my pumpkin pie
breakfast cookies the
other day and it got me thinking about portable
