Hi Katie, I have never made this
cake with gluten free flour
so I don't know how it reacts to the
other ingredients,
so I am thinking it is more the flour than the cream.
Then slice the top off of both
cakes so each
cake is even before layering on top of each

Cake with Coconut Whipped Cream.
The coconut cream is thick,
so take a spoon and spatula and using small amounts, frost the top of each layer (I use a very line layer of coconut cream) and then add the
other layer of
cake.
From what I've done before, when I put the batter into 2 pans, while one is in the oven the
other is resting and I have the feeling that the second
cake doesn't bake
so well because of the resting... How do you do it?

I kept the beets separate from the
other ingredients until the last minute
so that they wouldn't muddy up the color of my
cake, and in the process, lose the deep pop of color that was going to be really cool to see flecked throughout.
