Who will buy your
chile crop if each fruit looks different from the

do not all ripen at the same time?
I never missed and longed for any
other food as I
did for
chile when I got back to civilization.
And not only
did they adopt the
chile as their own, the Spanish also imported foods that they combined with
chiles and
other native ingredients to create even more complex
chile cuisines.
I
did a search to see if
other food bloggers were creating recipes for Hatch green
chile, and I found you.
However,
do not be discouraged when you see a recipe with New Mexico
chiles or
other types of
chiles.
Fortunately homemade
chile paste, very easy to make and this Paleo Sambal
chile paste doesn't require much cooking
other than boiling liquid.
I looked in my market and couldn't find guajillo or pasilla
chiles...
do they go by
other names?
If
other people like the mild and flavorful taste of green
chile like I
do, then more New Mexicans will prefer green
chile to red
chile.
If you don't have chipotle powder, you can also use any
other variety of powdered red
chile.
Put the cut
chiles into the Mason jar or
other glass container, pour with boiling - hot syrup (caution — don't burn yourself).
Several
others didn't like
chile at all and were not surveyed.
Do not let the
chiles get wet by rain, and protect them from flies and
other insects by wrapping them lightly in cheesecloth.

Don't be timid — the
chiles can take a lot of heat before burning; on the
other hand, we are merely blistering the
chiles, not incinerating them.
I have tried making this salsa with
other (cheaper) brands of canned, diced tomatoes & green
chiles, but it is never as good, you really
do have to use Rotel.
So if you have the time, don't just chop the cilantro, onions,
chiles, or any
other aromatics you're adding.
Stocks enrich soups, grains, and bean dishes with focused flavor, can offer up an umami flavor for folks not wanting meat or fish, and provide a home for, say, that
other half of a Hatch
chile I didn't need in a recipe, like this soup.
