I clipped this recipe from the December 9, 2012 issue of the Globe's Parade section because: a) it won a cookie contest (I love a good community vetting); b) the ingredient list is short (5 items); and c) the recipe is naturally gluten - free (i.e., no need for xantham gum and
other flour substitutes... I'm now constantly on the lookout for gluten - free items for the whole family, to accommodate Violet's allergies).
Like
other flour substitutes, this gluten - free flour is relatively expensive.
Well, the only
other flour substitutes that I can think of that would be similar for this and not be coconut flour or almond flour would be sunflower seed flour and flaxseed flour but you said they were nut and seed free so I suppose that won't work.

And you'll unfortunately have to learn by trial and error, especially if you're also having to
substitute for
other ingredients (like butter and / or wheat
flour).
Nut
flours are very particular, so you might be able to get away with
substituting, but you'd have to make some changes to the
other ingredients.
I made a couple substitutions — I filled the 1/3 cup up half way with maple syrup first, then the
other half of the way with honey; I used 1 cup whole wheat
flour and 1/2 cup unflavored protein isolate powder; I
substituted quinoa for the millet.
I have a question with this recipe (and perhaps it applies to
others)-- you mentioned in a comment that regular
flour can
substitute for the
other flours you have in the recipe (if you're not gluten - intolerant).
Coconut
flour will not work as a
substitute for almond
flour (or
other flours, for that matter) because the texture will be way to dry.

flour is definitely not a
substitute for any
other flour or
flour blend, as it seems you found out the hard way!
If you don't have oat fiber, I think most
other flours will
substitute fine, but this awesome ingredient is definitely the secret in keeping it lower calorie and still voluminous enough to pile on the toppings.

substitute up to 50 % of the all purpose for whole wheat
flour without needing to make any
other changes.

Since spelt does have gluten, it can be used to
substitute for
other flours such as whole wheat
flour.
Hi Melissa, you will get a different end result when
substituting ingredients, however, you could try to replace the
other 1/4 cup almond
flour with 2 tbsp brown rice
flour or tapioca
flour.

other flours, so that type of
flour would not work as a

substitute with naan bread, or
flour tortilla, or any
other flat bread you like.

In the
other ones (like Dutch Babies, Swedish Pancakes, etc), you can't just
substitute coconut
flour for the arrowroot.

flour) You can also add crushed Gluten Free corn flakes to the bread crumbs.
Also, please note that although tapioca starch is the same as tapioca

flour are two different ingredients and should not be
substituted for each
