My cookies typically use a lot of white flour, and substituting for
other kinds of flour, especially coconut flour and almond flour, can produce a very dry cookie.
if you haven't noticed yet, i tend to use buckwheat a lot in my recipes, given that it doesn't contain gluten and it works so well with replacing
other kinds of flour.

Coconut flour can be a bit tricky to work with — it absorbs a lot of liquid, so you usually use a lot less coconut flour than you would
other kinds of flours — but once you get the hang of it, the results can be very rewarding.
It's never a 1:1 replacement in baking recipes because it absorbs so much more liquid than
