Other than using only a small amount of the bread I pulled and making homemade cream of
mushroom, I stuck to the
recipe.
I made it with

Other optional veggies: I added a cup of sliced white
mushrooms, but broccoli, peapods, or any
others you like would work as well 4 tablespoons Pad Thai sauce, more to taste ** 1/3 cup peanuts, chopped 1/4 cup cilantro, chopped 1 lime, cut into wedges * you could alternatively use chicken or shrimp if you're not a tofu fan ** I used a jarred pad thai sauce to save some time but check out the original

This
recipe calls for textured vegetable protein (TVP), but if you find yourself with
other types of vegan meat substitutes on hand, feel free to use them or simply add more
mushrooms.
Just don't do what I did and try to saute the porcini
mushrooms instead of the crimini
mushrooms... I wish the
recipe said to set aside, or have you go ahead and work on the
other veggies and
mushrooms while the porcini
mushrooms are steeping, THEN tell you to slice them, which would then be time for everything to go into the vegetable broth.
The only things I can think of that I didn't differently: used homemade veg broth I had in the freezer (I'm vegetarian though my husband isn't and he thought the soup was great) used mixed dried
mushrooms (you can get a large amount from costco for not too much - I keep them on hand for all my dried
mushroom needs) did a healthy glug of sherry (more than the
recipe) into the
mushrooms when they were done sauteeing added spinach at the end to the soup For the dumplings, the only thing I did that was different than what many would do is use an egg from one of my hens -
other than that I made them just as
other people did but mine were full of flavor and could be eaten plain.
You can make the breadcrumbs in advance as they store well, and you can use them for so many
other recipes, like this Asparagus
mushroom gratin, or this Smoky spinach rice casserole, to name a few.
Other recipes being showcased and celebrated around the web for this book that I am itching to try next are Angela's golden french lentil stew,
mushroom bolognese, and the best marinated lentils.
A few
other recipes that I'm dying to make are the Ultimate Flourless Brownies, Oh Em Gee Veggie Burger, High - Rise Pumpkin Cupcakes, Lentil
Mushroom Bolognese Sauce and Miracle Healing Broth.
3 quarts of water to 1.5 oz of
mushroom seemed way too much water to
mushroom to make a flavorful broth so I used 1oz of one and 1 1.2 qts of the
other, let it steep for 10 hours and used the remaining ingredients in the amounts in the
recipe.
A few
others I feel can be staples in anyone's weekly
recipe round up are her
mushroom and brown rice veggie burgers, lemon and herb humus, and almond meal cookies with coconut and cacao nibs.

The
recipe is quiet versatile as you can use whatever vegetables you'd like, for this
recipe I used
mushrooms, asparagus, carrot, spring onion and baby corn, but feel free to add your own additional veggies like bamboo shoots, mung bean sprouts, cabbage, leek or any
other vegetable you prefer.
In fact, the only canned soup you will see me buying is for cooking in
other recipes such as cream of
mushroom.
Some
other recipes in her book that I have my eye on are Black Rice with Roasted
Mushroom Bowl (w / avocado and salsa verde), Chocolate Coconut Granola (because I sometimes do still crave chocolate!)
Unlike most
other stroganoff
recipes, this One Pan Beef Stroganoff is made without the canned, cream of
mushroom soup.
My question to you is, there are a lot of vegan
recipes that use
mushrooms, unfortunately I am allergic to
mushrooms, so for the
recipe above and
others, what would you substitute for
mushrooms?

Mushroom And Chicken Stir Fry
Recipe is a healthy combination of chicken,
mushrooms and
other vegetables stir fried with simple seasoning of cajun spice mix anad garlic bread spice mix.
My
recipe for the
mushroom tea uses 2 tbsp chaga pieces (small chunks sort of the size of rice or lentils), 5 - 6 medium reishi slices, a small piece of rehmannia root, 1 tbsp or so of green stevia leaf (the dried herb), a 1/2 cinnamon stick or some chai spice & any
other herbs I feel will complement these, all added to 2 litres of water).
The
recipe can be improved by adding high - copper foods such as soy or
other legumes,
mushrooms and sunflower or
other seeds.
Recipes include cacao, turmeric, medicinal
mushrooms and
other superfoods.
Works great on my French Onion Soup ~ English Style, or on top of this new
recipe for Creamy Broccoli Cheese soup; try it even on old - fashioned homemade chicken soup, my creamy Vichyssoise, my Rustic
Mushroom Soup, my Creamy Tomato Soup, my Roasted Bell Pepper Soup, or any
other of my original collection of homemade soups.
