To add lightness to a recipe (especially cakes and breads), try beating your eggs for 3 - 5 minutes before mixing with your other ingredients (see my Paleo «multigrain» bread for an example).

Especially seeing as I haven't tried any of the other grain free or Paleo banana breads on the internet.
