Is there any way to make the vegan ricotta using something
other than the cashews?
Other than cashews, I never ate them, and I absolutely hated them in my baked goods.
I'm planning on doing lots more experimentation with vegan cheeses and will definitely post if I'm able to come up with a recipe using something
other than cashews!
I haven't tried this with anything
other than cashews, but my best guesses would be tahini or hemp seeds.

This curry definitely had quite a bit more sauce
than some of my
other chicken dishes (like the spicy
cashew coconut chicken) but I don't remember it being soupy... If you'd like the sauce a bit thicker next time you can always either reduce the amount of water or simmer it uncovered before you add the coconut milk.

other than being non-dairy.
I used agar agar powder to set the matcha chai layer as it makes it a bit more light
