I'm not so sure about
coconut milk though, as it's much richer
than all of the
other options.
I usually use
coconut milk beverage in recipe testing for two reasons: it's a little richer
than most
other milk alternatives and it's naturally free of top allergens, making my dish «friendly» for more viewers.
I make my almond
milk on a regular basis, in fact it's pretty much the only
milk I use now,
other than the occasional can of
coconut milk.

Hi Suzy, try it and see what you think because different brands of
coconut milk will be more stiff
than others.
If you substitute almond, rice, or
other milk you may need less
milk or more oats to get the texture you want since
coconut milk tends to be pretty thick and we like it that way rather
than runny
I have not been able to find
coconut milk in anything
other than cans either though.
This curry definitely had quite a bit more sauce
than some of my
other chicken dishes (like the spicy cashew
coconut chicken) but I don't remember it being soupy... If you'd like the sauce a bit thicker next time you can always either reduce the amount of water or simmer it uncovered before you add the
coconut milk.
The only
other change I made was to use unsweetened
coconut milk beverage rather
than straight
coconut milk for fewer calories.
Other than that, I like it and next time I'll try it with
coconut or almond
milk.

others which have
other unnecessary ingredients.
Their alternative ice creams are made with cashew, almond,
coconut, or soy
milk, all of which have their own benefits

You can use water,

other than rice
