Ok, so here's another
dish (besides these
Zucchini Noodles) that I've been eating every
other night.
It's packed with
zucchini, easy, affordable, can even be made into a vegan sandwich, the vegan egg serves as the perfect binder, packs heat, so much flavor, and the avocado cream is the perfect match for this
dish and countless
others, perf for any season, and non vegan approved!!
Anyway, this
dish is a much better way to use
zucchini or
other types of summer squash: sauté them in olive oil and mix them together with some chopped basil to make a delicious pasta
dish.
I prepared this side
dish using
zucchini, potato and carrots, but you can add any
other vegetables you desire.
Zucchini, tomatoes and basil are just made for each
other, you can serve as a side
dish, as suggested, or even as a main
dish topped with some grilled shrimp or chicken.
With
other dishes, I usually just add
zucchini at the end, so it's warmed up but still firm.
I smothered the
zucchini in the sweet hickory marinade and stacked them on top of each
other in a glass
dish.
I also use this tool for
other veggies like cauliflower (when making mashed cauliflower),
zucchini (when making spiralized
zucchini for pasta
dishes), and anything else when directed to remove excess liquid.
