In this dairy - free version
of champurrado, almond milk forms the base for spiced hot chocolate thickened with masa harina, all decked
out in
coconut whipped cream and hella chocolate.
I was so excited to try their sprinkles
out and instantly envisioned them on top
of a chocolate zucchini cake with a
whipped chocolate
coconut cream frosting.
To make the
coconut whipped cream, scoop
out the solidified
coconut cream from the top
of the can (leaving the water behind) and place in a bowl.
To make the
whipped cream, open the can
of coconut milk and scoop
out the top layer
of solid
coconut cream into the bowl
of a stand mixer (sidenote: save the remaining
coconut liquid for smoothies!).
Meanwhile, make the
coconut whipped cream by scooping
out the solidified parts
of the second can
of chilled
coconut milk into a chilled bowl for beating.
I am in China but this is the first time I have heard
of whipped cream made
out of coconut milk (just trying to buy regular dairy
cream in China is a nightmare in logistics) and I have bought numerous containers
of coconut milk here.
Start by making
whipped cream out of coconut milk.
I used my Mum's pie crust because it is by far the best pie crust
out there and
whipped up a batch
of homemade
coconut whipped cream to really seal the deal.
There are tons
of recipes
out there for
coconut whipped cream so I didn't invent this stuff.
For every homemade frappuccino I came up with, I make a vegan
whipped cream out of coconut milk.
I'm testing it again today and I'm going to try
whipped coconut cream instead
of the buttercream to see how that works
out
Since I don't eat a lot
of dairy I made the
whipped cream out of coconut cream.
To make the
coconut whipped cream scoop
out the solid
cream that has risen to the top
of the can and
whip it with electric beaters until creamy and fluffy (adding sweetener if desired).
Whip cream: Take the refrigerated can
of coconut milk and scoop
out only the solid portion.
With layers
of sweet mango, creamy vanilla
coconut whipped cream, and chia pudding, this parfait is
out of this world!
So to balance
out the winter vibes all around, I
whipped up a batch
of coconut pancakes and made a super quick mango nice
cream to treat myself properly.
And as for little Pan Pan panda, all this cake needed was a coat
of whipped cream flavoured with a bit
of coconut and a few features cut
out to make the panda face!
To make the
coconut whipped cream, take the
coconut milk
out of the fridge and open the can.

If you are checking
out this nondairy
whipped cream recipe in the cooler months and consistently keep your home at less than 70 F / 21 C, then you can probably use the
coconut cream right
out of the pantry as it will be solidified already.

out there for
coconut whipped cream so I didn't invent this stuff.
I suppose i was trying to figure
out if the fat & carb value are different if you
whip the milk into
cream or i just use a can
of organic
coconut cream?
My favorite bulletproof coffee is any Keurig K - cup
of coffee I happen to have in the house paired with my Land O Lakes salted butter, some refined
coconut oil (I don't measure, just grab a soup spoon
out of the drawer and plop it into the blender) a splash
of heavy
whipping cream (high fat and VERY low carb) along with a little salted caramel or butterscotch sugar free syrup.
If you need a yummy topping, we mixed up a quick and tasty frosting made
of 1 cup
of heavy
whipping cream, 1 teaspoon
of vanilla extract, 2 tablespoons
of erythritol, and 1/4 cup
of coconut milk (that's what was left in the can after we took
out the cup
of cream).

of good quality extract works too), I usually add a few drops
of vanilla SweetLeaf drops (
coconut sugar would work here too if you aren't concerned with sugar / carbs).

coconut cream makes an excellent and delicious stand - in.
I ran
out of coconut milk and used full fat
whipping cream since it's a similar consistency.
