Hershey's Classic Chocolate Chip
Cookies is adapted
from the popular Hershey's classic chocolate that is addictive and tastes
out of the world.
Remove the top sheet
of parchment paper and use a 3 - inch
cookie cutter to cut
out clean rounds
from each
of the 12 pieces
of dough.
This pastry cloth and board make quick work
of rolling
out everything
from GF pie crust and GF crackers and GF cutout
cookies and GF tortillas.
The addition
of walnuts makes these holiday
cookies stand
out from the pack.
Using a
cookie cutter, cut
out twelve circles
from each sheet
of puff pastry.
For those
of you that don't know me, I'm Chef Dennis and it's my great pleasure today to be here with you today and share a new
cookie recipe with you.I have to start
out by saying that while I'm not really a baker, it is something that I truly enjoy doing.While I have made my fair share
of cakes and pies,
cookies are one treat that has eluded me.I do have my one go to
cookie, courtesy
of Alice Medrich, but I've pretty much beaten that one into the ground this year, and I knew I needed to expand my
cookie repertoire.I started going through my cookbooks looking for inspiration, there were so many wonderful
cookies to choose
from, but in the end I decided upon a
cookie that I had seen in my wife's December edition
of Real Simple.The cover
of the issue simply stated «30 impressive make - ahead
cookies» and as I looked through the magazine, nothing really grabbed me and then I turned the page to the last
cookie, and there it was.......
I am so glad you ate a ball
of cookie dough
from the walkin because it made me laugh
out loud, and today I needed that.
The
cookies pop right
out of the cups with just a little nudge
from a sharp knife.
When freezing, I boil first, let them dry off a bit (a wooden cutting board keeps them
from sitting in puddles
of water; don't put on a
cookie rack — the thin metal cuts through the soft dough and all your fillings slurp
out), then freeze them on baking sheets dusted with flour.
I will take
out two
cookies from the freezer and enjoy them without a trace
of guilt
of procrastination, and no boring tomorrow - I'll - go - on - a-diet speeches.
Remove dough
from the fridge and roll dough
out on a floured flat surface to 1/8 inch (2 mm) cut with a round
cookie cutter approximately 28 circles (2 1/4 inch / 6 cm size), place 14 circles on a parchment paper lined
cookie sheet, place a heaping teaspoon
of apple filling on each circle, gently spread the filling, be sure not to go over the edge, cover with another circle and close the edges with a fork (I lightly wet my fingers and closed the edges).
I don't think there is a human on earth (adult, child, family, future spouse, MEEEE) not pleased when you can pull
out scoops
of chocolate chip
cookie dough (or our house favorite, Oatmeal Raisin with Chocolate Chunks)
from the freezer, and bake them as needed.
Remove first section
of dough
from the refrigerator and cut
out cookies with any shape cutter you like.
So, suffice to say that these
cookies will not flatten
out, but a good amount
of tahini certainly does wonders for keeping them
from drying
out into something resembling a brick, which would not be enjoyable to eat.
Instead
of removing each
cookie you cut
out and transferring it to a pan, cut the
cookies and remove the excess dough
from around them, so you don't have to worry about messing up the shape
of the
cookies when transferring them.
Plus — you only need 5 ingredients to go
from cookie craving to warm, fresh
out of the oven, lemon
cookie goodness.
These gluten free
cookies are egg free and dairy free but still super soft
from the pumpkin puree and packed with double chocolate flavor
of chocolate chips and chocolate dough dispersed through
out.
We would usually do the tasks like scooping
out cookie dough onto baking sheets (while also nomming on the dough
of course) or separating
out our secret ingredient, the bran,
from the raisins (yuck).
Then every half hour, I just take the hot mixture
out of the oven on the
cookie sheet, pour it
from the full bag to the empty one on the counter, and then put the (new) full one back in the oven.
Cookies 1 - 3: The
cookie recipes
from myrecipes.com, Taste
of Home and Good Housekeeping were all similar and didn't stand
out, perhaps
from my overworked flavor receptors.
Baking holiday
cookies can go
from a labor
of love to an exercise in frustration when your gingerbread men come
out more bloated than a Macy's parade float.
We gave her Mag Club brownie points for making a little sense
out of complete nonsense, and, by extension, a very delicious treat
from leftover
cookies and a pantry devoid
of sugar.

Meanwhile, using
cookie cutter, cut
out a circle
from each tortilla, stacking 12 in each
of two folded sheets
of foil (reserve remaining tortilla scraps for chilaquiles).

If you're not familiar with one just yet, think about using it to spread batter evenly in a pan for bar
cookies, lift cut -
out cookie dough
from your work surface onto a baking sheet, move baked
cookies onto a cooling rack or gently flatten balls
of unbaked dough on a baking sheet.
We made the Star
cookies with our grandsons and they were so oily
from the amount
of coconut oil you could squeeze the oil
out of the dough.
Once removed
from the oven & impatiently waiting for it to cool I removed the
cookie bars (sliding
out of my bread pan) onto a cutting board and sliced as your prefer.
Then I take
out my mini spoon and take some and hide the can at the back
of the fridge:) It takes the edge off
of my craving and keeps me
from getting violent:) Now those waffle
cookies are unique.
While I generally like to steal a
cookie (or five) warm
from the baking sheets, these
cookies benefit greatly
from cooling to room temperature (and are fantastic
out of the freezer especially if you have the patience to let them sit on the counter for about 3 1/2 minutes — pure bliss).
The freshly squeezed lemon juice adds just the right amount
of tartness to nicely balance
out the sweetness
from the sugar
cookie.
I also have to admit that there was a slight ulterior motive to the entry question I asked — I'm going to be doing another week
of Christmas
cookies and I wanted to feel
out some new ideas
from readers.
Use
cookie cutters and have him cut the shapes
out from the tortillas and then fry in cocounut oil and then once fried dip them in a bowl
of cinnamon lay them
out to cool down.
leftover ground quinoa (
from making your quinoa
cookies:) and I used that in place
of oat flour, so it was: 1/3 c. quinoa flour, 2 / 3c,
out flour and 1 / 4c.
Remove the
cookies from the
cookie sheet as soon as they come
out of the oven to prevent over-baking.
Let the trays sit
out anywhere
from 30 - 60 minutes; as long as it takes until when you touch the top
of the
cookies they are dry and no longer tacky to the touch.
To celebrate September and my cookbook coming
out, I thought I would share one
of my favorite
cookie recipes
from The I Heart Naptime Cookbook!
Although we excluded oatmeal chocolate chip
cookies from this experiment, we included the Neiman Marcus recipe which uses oat flour
out of curiosity.
Well, the
cookies that I tried
from Affairs
of Living's site didn't turn
out so great (though the other kids at our table surprised me by eating a number
of them and to be fair, I did alter the original recipe a bit due to dietary restrictions), but the chips sure were a success.
Also it is quite remarkable how the flavor / texture
of these
cookies evolves
from the time they come
out of the oven through the day after... really interesting.
The seasoning is equal parts cinnamon and ginger and a bit
of cardamom that will add a delicate flavor to make your
cookies stand
out a bit
from tradition.
