I love this recipe but as the 90 degree
heat of a Tucson May approaches, I've switched
out steamed sweet potatoes for the butternut squash (can't turn
on the oven, its too hot!)
A good punch

of the lentil and nut mixture and roll with your hands to form a ball, continue until all the mixture is used, placing about 2 inches apart
on a baking tray Bake for 25 - 30 minutes until a slight crust forms Serve over pasta, top with your favorite sauce!
However, my wraps are usually soft as soon as I take them
out of the pan, which makes me think that keeping the wraps
on the
heat for too long was the main problem.
When I want to
heat»em up, I take them
out of the freezer and let them thaw for a few minutes (you really don't have to wait very long at all) and then toss them
on a pan over med - high
heat with a little olive oil.
Also, I had to store the leftover muffins in the fridge because the big ol' chunks
of peach in them couldn't be left
out on the counter in this
heat.
All this together was an amazing balance
of creamy and a little
heat GREAT recipe, it will be used in our household from here
on out
We focus
on bringing
out the flavor
of the spicy peppers we use, rather than the
heat, and slow cook our sauce to perfection.
I used a bottle
of Trader Joes salsa verde as a sauce
on these to balance
out the richness
of the filling, and I didn't
heat the tortillas before filling.
Directions: Saute chopped leeks and garlic in butter, medium low
heat, until very soft — 10 — 15 minutes / Add 1 t fresh thyme if you have it / Mix milk and egg together with salt & pepper / When tart shell is done and slightly cooled, sprinkle one half
of the cheese
on the bottom / Spread cooked leeks over cheese, pour egg milk mixture over the leeks / Sprinkle top with remaining cheese / Bake in a 375 degree oven until egg is barely set and tart is lightly golden — 15 — 20 minutes, longer for a larger pan with more filling / Remove from oven, lift
out of tart pan base, place
on a rack to cool a bit / Serve while warm / Swoon.
For Potstickers:
Heat a large skillet
on medium, drizzle 1 teaspoon
of sunflower oil (or other neutral oil) and, once hot, place a few dumplings to the skillet, making sure to space them
out so they don't stick together.
Directions: Rinse quinoa, allow to drain thoroughly, place in boiling salted water and simmer with lid
on for 15 — 20 minutes, until tender / Remove from
heat and let sit with lid
on for 5 more minutes / Spoon and spread quinoa onto a cookie sheet / Let it cool and dry
out a bit, then put quinoa in a large bowl / While quinoa is cooking, place squash ribbons and leeks
on one or two cookie sheets, drizzle with 2 — 3 T olive oil, sprinkle with salt and pepper, toss and spread evenly across the pan / Roast at 425 degrees for 12 — 15 minutes / When tender, remove from oven and let cool / My squash ribbons sort
of fell apart at this point.
