i made this last night, and have just finished it off for lunch, its absolutely delicious, i made a few tweeks, i put the potato in raw, i cut them into cubes, but didn't par boil them, this thickened up the curry nicely, i also added, fresh garlic and coriander
at the end with the spinach, it was quite thick today, so i loosened it up with some coconut milk (fresh) it really is so good, i served it with black
quinoa, I've also just received your book, can't wait to try

I know once these
Quinoa Almond Herbed Bread Sticks are
out of the oven it would be difficult for you to resist but
at least let it cool down a little so that there are no crumbs.
I haven't done enough experimenting with
quinoa outside
of traditional recipes and the occasional baked good, so I was totally shocked
at how crunchy this came
out.
Directions: Rinse
quinoa, allow to drain thoroughly, place in boiling salted water and simmer with lid on for 15 — 20 minutes, until tender / Remove from heat and let sit with lid on for 5 more minutes / Spoon and spread
quinoa onto a cookie sheet / Let it cool and dry
out a bit, then put
quinoa in a large bowl / While
quinoa is cooking, place squash ribbons and leeks on one or two cookie sheets, drizzle with 2 — 3 T olive oil, sprinkle with salt and pepper, toss and spread evenly across the pan / Roast
at 425 degrees for 12 — 15 minutes / When tender, remove from oven and let cool / My squash ribbons sort
of fell apart
at this point.
I was in the mood for burgers and discovered we were
out of ground beef, but we do have a ton
of quinoa in the freezer (from an abortive attempt
at a special diet for our puppy — long story), so I thought I would search for a
quinoa burger recipe, and found this.

out the last meal for
quinoa and steamed vegetables.
