of the moisture
out of the zucchini before adding it to the
mix and I also cooked it
at gas mark 4 (180C) for the same amount
of time listed in your recipe.
Mould the
mix into the individual tins, then place the tray
of bases in the oven for 15 minutes, until they start to turn golden brown —
at which point take them
out and allow them to cool.
Cream room temperature butter and brown sugar together for 5 — 8 minutes / Add egg & milk mixture (w / extracts) a little
at a time until fully incorporated / By hand or with
mixer on lowest speed, alternately add flour and buttermilk until just incorporated — don't overmix
at this point for the tenderest cake / By hand gently stir in 2 — 3 cups

If you are like me, you probably have a base
of 4 - 5 flours that you use regularly, and when you see a recipe with someone else's gluten free flour
mix, you do your best to make do with what you own rather than going
out to spend even more money
at the store — cause let's face it — gluten free ingredients often bring a whole new definition to pricey groceries.

of the cookie sandwich (the parts where dulce de leche is exposed) with shredded coconut
Remove the can
of coconut milk from the refrigerator and without shaking it or turning it upside down, open it and scoop
out the solidified, waxy layer
of coconut cream
at the top into a medium
mixing bowl.
Add the garlic
at the same time and cook for 1 minute, then dip about a cup
of the water
out of the pasta pot, and put it in with the tomato paste, garlic, onion & fennel pot and

1) Pre-heat oven to 350 deg Fahrenheit (175 deg Cel) and line a metal baking pan or cast - iron pan 2) Blend the cashew nuts in a food processor or a blender until it becomes like fine sand (if necessary, pass the blended cashews through a sieve — and re-process the parts that are not fine enough to pass through the sieve) 3) In a large bowl, whisk the ground cashew nuts, tapioca flour, salt and baking powder together until combined 4) In another bowl,
mix the honey, vanilla extract and egg together until all ingredients are well incorporated 5) Pour the wet ingredients into the dry ingredients and
mix well until you get a homogeneous batter 6) Gently stir in 1 cup
of fresh blueberries until evenly distributed 7) Pour the batter into the baking pan or cast iron pan, and evenly distribute the rest
of the blueberries on top 8) Bake for around 30 minutes (or until a toothpick inserted in the middle comes
out clean) 9) Let the scones cool for
at least 10 minutes before slicing into 8 portions.
This is what worked for me finally... whipped the egg whites for eight minutes with 1/2 tsp
of cream
of tartar, slowly
mixed in the softened cream cheese and protein powder, baked it
at 325 for 30 minutes, then turned the oven off but left the bread inside to cool — turned
out amazing.

To answer the dry cake concern I would recommend not
mixing the batter too much and I checked it
at 25 minutes instead
of 35 and it came
out moist and VERY flavorful.
For the best results, have your ingredients
at room temperature (I usually store my maple syrup and almond butter in the fridge, so I pull them
out and stick them on top
of the warming oven for half an hour or so before
mixing up the dough).
Take the tray
out of the oven, add the almonds, linseed, sunflower seeds, half
of the coconut (1/2 cup), cinnamon and 1 Tbsp honey and
mix (adding even more honey
at this stage will create little oat clusters).
I would recommend holding
out on the
mix - ins till the morning
of, and adding the lucuma
at that time too!
