There are two distinct types of whey: Acid whey, the stuff that gets
strained out of yogurt and ricotta - like cheeses.
It often leads to strange things like washing your face with olive oil or honey or making a face
mask out of yogurt.
You can coax more whey
out of the yogurt with gravity if you'd like, by first tying the cloth up and then tying it to a wooden spoon.
I ate it with plain yogurt a few times but I ran
out of yogurt and purchased organic kefir recently so I thought I would use that.
