- While the squash roasts, cook the ground beef by placing a medium -
size non-stick pan over medium - high heat, and drizzling in about 1

If you don't have large eggs but have some egg whites sitting in your fridge, use 3 medium
sized eggs and a few
tablespoons of egg white for this cake and it will turn
out marvellously good too.
Form balls
out of
tablespoon -
size scoops of the mixture and set aside.

Remove pan from heat and scoop

out onto a tapioca - flour sprinkled flat surface and gently knead it until it forms a ball that does not stick to your hands.
Scoop
out cookie dough about the
size of a heaping
tablespoon, roll into a ball, and place onto a parchment lined cookie sheet.
When dough is chilled, scoop it
out by heaping
tablespoons or use a standard -
sized cookie scoop.
Using a
tablespoon, scoop
out as much cookie dough as necessary to make the
size of cookies you desire.
I ate one medium
sized slice with a
tablespoon of Greek yogurt and raw honey (blended into a kind of glaze) drizzled on top right
out of the oven.
