Yvette, tea is fine but leave
out the water kefir while juice fasting.
Strain
out the water kefir grains and refrigerate the liquid (no metal please), clean the mason jar, and repeat the process for a new batch of water kefir.

I also figured
out a faster (almost cheating) way to make it using pre-made
water kefir (see below the recipe for the variation).

I strained
out and rinsed the grains and they were fine, but since I'd already dumped the finished
water kefir into the coconut milk, I decided to let it ferment and see what happened.
The only thing we use sugar for is making Kombucha,
water kefir and homemade sodas, and the great majority of it is fermented
out and converted to beneficial bacteria before we drink it.
While kombucha is delicious, I'd also suggest branching
out into other healthy probiotic foods and drinks like: sauerkraut,
water kefir, beet kvass, or homemade ginger ale.

water kefir is just as simple as making milk

water and then reuse it to make new

water or (iv) try using 1/2 — 1 cup of natural yoghurt or
kefir (a fermented milk drink) and thinning
out with
water, as required.

Water kefir itself can be stored in the fridge or
out of the fridge indefinitely, but the flavor will continue to change and may not be appealing after a few weeks.
