oven temp thing to start baking.

things, you can pre mix this and keep in the fridge but let it sit to room
temp day of before you pop it in the
oven.

oven dipped to 325 — so who knows what
temp this
thing was baking at.
First
thing is
oven temp, if you are running a mechanical product they can be hotter due to calibration of the thermostat, this is often exaggerated at higher temperatures.
The only
thing I can think of is maybe your
oven temp might be a little off.
One
thing I always do with baked goods, though, is to place a standalone
oven thermometer right on the rack where the cookies will bake, and adjust the
oven controls until that thermometer reads the required
temp, regardless of what the
oven says.
My
oven temp is on point, I don't bake two
things at once so I know it wasn't that.
