A gorgeous and refreshing Winter salad made with citrus, arugula, chopped mint, pistachios and red onion
over arugula with a lovely dressing made with 7 Barrels White Truffle Extra Virgin Olive Oil, lemon juice, salt and pepper.
I served
it over arugula with additional balsamic vinegar.

Several years ago my parents planted some
arugula in their garden and for years the
arugula would re-seed itself, taking
over the entire garden
with a flourish, starting in December.
Then I will cut the steak into thin strips and serve
over a bed of
arugula and top
with sliced cherry tomatoes, black beans, pumpkin seeds, and sliced avocado.
Toss the
arugula leaves in the dressing too and place some leaves
over the tomatoes (you'll serve the remaining leaves
with the tart slices).
The watermelon and feta was served
with toasted pine nuts
over a bed of
arugula.
Served
over a bed of fresh
arugula lightly dressed
with olive oil and lemon juice.
Divide steak between four plates, spoon blueberry sauce
over top, and garnish each portion
with arugula.
For dinner I roasted the squash as in the recipe, but served it

I toss the roasted vegetables
with 4 cups of mature
arugula and place a portion
over the tonnato.
Plate the
arugula and then layer
