Boyfriend came

pancakes for dinner, and he LOVED them (score 1 for me), but he reminisced and told me how his dad used to make
banana walnut waffles.

bananas atop the
pancakes, drizzled a teaspoon of honey
over, and placed one plate for her, one for me.
1) Combine the dry ingredients (almond flour / meal, tapioca flour, baking powder, salt) in a medium bowl 2) In another medium bowl, whisk the milk, mashed
banana, eggs, vanilla extract, and honey together 3) Slowly add the dry ingredients to the wet ingredients and mix until combined 4) Pre-heat a non-stick pan and melt a little butter 5) Scoop about 1/4 cup of batter in the middle of the pan to make small
pancakes (the smaller the
pancakes, the easier it will be to flip them) 6) Let the
pancake cook on one side until it automatically unsticks from the pan, then flip it
over until the other side turns golden brown 7) Repeat last step until all the batter is used up 8) Serve

Over the course of the past few years, I have made quite the variety, from nutritious three - ingredient
banana pancakes to decadent triple chocolate dessert - style cakes.
I have fallen completely head
over heels in love with these gorgeously light
banana, blueberry and cinnamon
pancakes.
I wanted to make these
banana & blueberry
pancakes last weekend, however we didn't have any
bananas so I decided to improvise with some left
over stewed apple from these blueberry, apple & buckwheat muffins.
As the only sweetener in these
pancakes is ripe
bananas, you can happily add a little pure maple syrup
over the top and not feel like you have eaten dessert for breakfast.
I just made
banana pancakes over the weekend and I think I used about 5 ingredients in total!
Uses:
Bananas, apples or berries can take the place of sugar when making muffins, can be added to
pancakes and smoothies and poured
over oatmeal or other hot cereal.
I just made them now, using whole chia seeds instead of the ground flaxseed (just because it's what I had available) and also adding a scant cup of very thick
banana and berry smoothie that was left
over from breakfast (I would normally put some inclusions in
pancakes, such as chopped
bananas or berries, that was the inclusion for today).
When can I come
