And just because I couldn't help myself, as usual, I drizzled some chocolate
over my cheesecake bites, and as if that wasn't enough, I drizzled some caramel sauce on top of them as well.

As it happened, I ended up with a little
bit of pastry left
over, so I also made some mini chocolate
cheesecake tarts for pudding.
The
cheesecake should still be a
bit jiggly when it comes out of the oven to ensure that it hasn't been
over baked.
Then take the pumpkin pie mixture and use a large spoon to gently spoon this purée
over the
cheesecake layer,
bit by
bit.
If your
cheesecake is a
bit over done use a spatula or knife to loosen it from the pan while it is cooling other wise cracks form as it slightly shrinks.
