This one is on regular rotation in our house; I serve
over cauliflower rice for myself and regular rice for husband and toddler.
Add a couple tablespoons of olive
oil over the cauliflower and use your hands to make sure the cauliflower is thoroughly coated in oil.
And stir -
fry over cauliflower that's chopped in the food processor and cooked in a skillet with oil.
Top with the pizza sauce, and use a spoon or spatula to spread it
evenly over the cauliflower, making sure not to mix it into the cauliflower.
When the butter is very hot, but not boiling, add a squeeze of lemon juice, then pour the contents of the
pan over the cauliflower.
Toss in the roasted peanuts and serve
over cauliflower rice with chopped cilantro, additional peanuts if desired.

I used some leftover roast chicken to throw together a coconut chicken curry with peppers &
onions over cauliflower rice.
If you have time to roast a head of garlic, you could mash it and rub it all
over the cauliflower steaks instead of using garlic powder.
