According to the Wikipedia a frittata, very similar to quiche and strata, is «an egg - based Italian dish enriched with additional ingredients such as meats, cheeses, vegetables or pasta and such ingredients are combined with the beaten egg mixture while the eggs are still raw rather than being
laid over the egg mixture before it is folded, as in a conventional omelette.
Sprinkle the remaining 1/4 cup
cheese over the egg mixture and broil it for 2 1/2 — 3 minutes or until frittata is golden brown and lightly puffed.
Sift the flour and baking powder
over the egg mixture and fold in using a rubber spatula.
Sprinkle the cocoa
over the egg mixture.
Combine flour and salt in a fine mesh sieve and sift the two
over the egg mixture.
As soon as it reaches the boil, pour
it over the egg mixture, stirring well.
