David, I didn't think the
original recipe could get any better but this one is
over the top Super Fabulous.
For
over 40 years I've been cooking up a variety
recipes — classics, New Mexico classics, variations of the classics, and MJ
originals.
I poked holes in the bottom of the cake before pouring the glaze so it really gets into the middle instead of just pooling around the outside, and I added it all to the cake while still in the pan, instead of reserving some to pour
over the top (which is what caused the sticky mess in the
original recipe).
Hahaaa... I agree as I had to cook my still VERY moist banana nut loaf for
over 1.5 hrs when the
original recipe called for your typical 1 hr... The darn thing just didn't want to dry up... But I ended up removing it from the cooling oven after I came back from running errands and even though still «wet», it tasted awesome... I was looking for a
recipe that called for coconut flour as I thought that might improve on the absorption capability and came across your
recipe... sounds perfect!
The
original recipe says to simmer the cherries in the pickling juice but I had some liquid left
over and just poured it
over some uncooked fruit and the results were crisper and just as good.
