I enjoyed plating the tuna and white bean
salad over mixed greens but you could easily skip the mixed greens and
just do a vegetable on the side.
My husband and I thought this was
just as yummy
over greens (plus I was out of avocados after the photos seen here and the
salad was requested again by the hubby).
You might have a little nub left
over, so
just slice it up and add to the
salad.
Ready in
just a couple of hours, juicy pork tenderloin with a side couscous
salad featuring a delicious parsley vinaigrette for spooning
over the couscous and the pork.

over from the pumpkin feta muffins although the dynamic of the
salad was a little different, it was delicious.
