Once chicken is cooked through, turn heat to medium, top each piece with two slices of the mozzarella, pour the
tomatoes over the top of the chicken, cover and cook just until mozzarella is melted, about 2 minutes.
Evenly distribute some tomato slices, a tablespoon of sliced olives and crumbled
feta over top of the chicken and pop it in the oven to bake for 20 minutes or so.
Mix the remaining 1/2 cup BBQ sauce with the vinegar and drizzle
it over the top of the chicken.
Add ranch or blue cheese *
over the top of the chicken.
Slice each piece of chicken and place on the serving tray, pouring the Dijon sauce
over the top of the chicken.
Top with a breaded chicken breast and spoon some of the sauce
over the top of the chicken and pasta.
