Hey Ella, I baked these amazing
muffins over the weekend and I'm surprised there are still any left, they're so nice I wanted to eat them all in one I read the comments beforehand and to fix the «burnt
top / raw inside» issue I squeezed all
of the moisture out
of the zucchini before
adding it to the mix and I also cooked it at gas mark 4 (180C) for the same amount
of time listed in your recipe.
Instead
of adding sweeteners I just place fresh or frozen strawberries in the
muffin form and pour coconut butter
over it, leave
tops of fruit out and cover with thin layer
of coconut butter.
I did everything wrong from accidentally melting the butter when trying to soften it in the microwave (put it in the freezer for a few minutes afterwards) to most likely curdling the sugar mixture when I
added the yogurt (the low fat kind) to yanking the
muffins out
of the oven 5 seconds after I put them in there hoping like crazy that the thought
of rising hadn't even entered their little
muffin heads yet while I dumped brown sugar
over the
tops.
