Holding the dish at a 45 degree angle, higher end near you, and starting at the far side of the dish, create a row of slightly
overlapping zucchini slices that are standing on edge.

Arrange the
zucchini in
overlapping rows (due to our rather hefty
slices, we laid them flat).
Place the
sliced zucchini noodles (or eggplant, as in the photo above) in a colander, trying not to
overlap.
I used a fairly large eggplant, mixed thyme leaves in the tomato base (in addition to sprinkling them on top of the
sliced vegetables, to up the thyme flavor) and layered the eggplant
slices on top of the tomato base, without
overlap, then peppers, then yellow squash, then green
zucchini and then another loose layer of peppers.
Once you've created enough
zucchini slices, arrange 5 of them on a cutting board, slightly
overlapping each
slice over the other.
When I saw this video I was blown away,

slices of
zucchini, what a game changer!
On a board or plate, lay a
slice of eggplant down followed by
overlapping ribbons of the
zucchini (I use enough
zucchini to match the width of the eggplant).
