So many
kimchi recipes I looked at called for shrimp paste, or korean spice blends.
I'm new to the community and came here while searching healthy, easy,
kimchi recipes with only ingredients that I can actually recognize!
I was testing out easy
kimchi recipes as I will be introducing some fermented foods into the revised Culinary Nutrition Expert program.
I can imagine that people searching online for
a kimchi recipe might stop here and wonder why they've landed on a site about Paris, chocolate, and baking.
and I forgot to add that the reason why i was so impressed with
your kimchi recipe was that unlike soooooo many other recipes, you did not add vinegar!!!
The fermentation crock does come with a recipe leaflet but unfortunately
their kimchi recipe contained some non-vegan ingredients so I used a slightly adapted version of Simple Veganista's recipe instead.
This could not be truer than it is for this cucumber
kimchi recipe.

Believe it or not the traditional

The reason why I made a small batch
kimchi recipe is because my husband doesn't enjoy eating kimchi as much as I do, and it's difficult for me to eat a huge batch by myself!

kimchi recipes (and recipes that utilize kimchi) in this book that I will definitely try in the future, but the one I decided to make first was a slight variation on the Instant Apple, Persimmon, and Pear Kimchi that appears on page 65.

It's completely fine to make the
kimchi without the chili pepper flakes, the only mandatory part of the
recipe is soaking everything in the brine (salt water) and keeping everything submerged under the liquid.
