saag paneer — maybe swap out the swiss for some paneer and add a pinch of garam masala and ground nutmeg for a little indian flair just to see what happens...

I've lived in Nepal for almost 6 months and 4 months with a local family were I ate dhal bhaat (lentil soup, rice and some kind of curry — > spinach /
saag was my favorite) twice a day.
Janet's favourite is a classic chicken tikka masala whereas I love a lamb
saag (spinach).
Our mild curry is a great base sauce for a range of curries including a tikka Tikka masala style curry by adding some coconut milk or with a handful of spinach into a lamb
saag.
A wonderful way to use up large quantities of greens is

I used it in
a saag paneer - my family loved it!
Saag Chicken -------- 2 lbs chicken breast, cubed 5 cloves garlic, minced 2 large onions, minced 1 (400g) can crushed tomatoes 1 inch ginger, minced 4 tbsp milk 4 bunches spinach, washed & chopped 2 tbsp butter 3/4 tsp cayenne pepper 1 tsp ground coriander 1/2 tsp turmeric powder 2 big cardamom pods 2 whole cloves 7 tsp oil 1 tsp garam masala 1/2 tsp salt
You can use any type of cooking greens to make
saag, and the types and ratio will give you different levels of sweetness.
I make paneer quite a bit (or ricotta lol) and I would love to try
your saag version of it — so many amazing flavors!
You could do this with any greens, fresh or frozen («
saag,» not «palaak,» remember?)
Some saag recipes call for as much as a half cup of butter or ghee, while other go spartan with a tablespoon.
