Last Saturday I made a special point to attend the cooking class at Grace - Marie's Kitchen because she was making Paella, which I have tried to make a couple of times, but wasn't happy with the results.

I learned all Paella secrets with my catering staff.

I will share with you my own version of a delicious Vegetarian Paella.

Although it is common to distinguish between «Paella Valenciana» (made with chicken, rabbit and some vegetables like green beans) and «Seafood Paella» (made with different kind of seafood and vegetables), I have to say that Paella is actually a popular dish that each family would prepare with the ingredients that they would have available in their pantry at the time.

This simple recipe of sausage, shrimp and brown rice with saffron was easy to prepare, and I thought it came out close enough in my book to call Paella.

This paella is filled with most of the same stuff as its more popular counterpart, such as saffron, olive oil, and paprika, but offers a new dimension in taste.

This simple vegan Spanish rice with chorizo is a meat - free and 100 % cruelty - free alternative to the classic Paella.

My pork and chorizo paella uses no seafood, so is cheap, but great with a big salad on the side.
