I recently visited the amazing Flor de Michoacan in Tulum
for paletas and ice cream and was reminded how much I love Mexican vanilla ice cream.
Tamarind - chile is one of the hundreds of flavors
of paleta that you'll find in Mexico.
I usually make my avocado
paletas with lechera, but I've never used coconut milk — what a great idea.
My favorite vendor by far was the one selling frozen
paletas from his plastic penguin on the beach (see photo below).
From tamarind - chile to strawberries - and - cream, here are our favorite Mexican
paleta recipes to try this summer.
You can also freeze the mixture
in paleta molds for a popsicle that you can enjoy in a glass of sparkling white wine or Prosecco.
The only problem is that when winter rolls around, I miss
making paletas.

Oh wow this sounds delicious, my
favorite paleta flavor as a kid was definitely strawberry milk flavor, that is the only way I know how to describe it:)
Even though it's fall in the Yucatan, the temperature is still in the 90's and writing
about paletas has made me want one.
During the summer, I always
want paletas for dessert whenever possible because, well, it's typically REALLY HOT in the part of Los Angeles where we live.
You can get a colorful effect similar to horchata con tuna in your
horchata paletas with blackberries if you break some of the berries to let them bleed a bit, and macerate them with a little bit of sugar to draw out the juices.
I developed the recipe for these vegan avocado and
cacao paletas with those fudgy popsicles from my childhood in mind.
Cold brew and condensed milk are the only other ingredients you need to make a batch of these sweet and
simple paletas.
My contribution is about the
easiest paleta you can make (aside from maybe pouring juice in a popsicle mold).
What I'm trying to say is there should be absolutely nothing stopping you from making yourself some
homemade paletas this summer.

The Spanish
style paleta (popsicle) bar is pure genius and the peach, pink, coral, and red colors running throughout the entire shoot are simply gorgeous.
Its consistency is a bit thinner than the canned light coconut milk called for in my
avocado paletas and it has less fat.

Impress your friends by whipping up a few
paletas de pina, (pineapple ice pops) in the cabana, or pulling out a paleta de arroz con leche — a frozen take on rice pudding.
With just two ingredients — puréed pineapple and sugar —
these paletas are unbelievably simple to assemble.
I've used a Norpro Ice Pop Maker popsicle mold to make
these paletas, which makes 10 three - ounce popsicles and holds the sticks perfectly in place while in the freezer.

paletas and shared a recipe for paletas de mango con chile on the Kenmore Genius Blog recently.
The best part of summer is the peak availability of so many fruits; it means you can make a variety of sweet treats with little or no added sugar, such as street food - style mango and orange cups with coconut chips, watermelon aloe juice, and all kinds of
paletas.
There are two types — those made with water or
paletas de agua, and paletas de leche or crema, which are made with milk or cream.
Whatever is in season will wind up in
a paleta.
These paletas sound AMAZING.
