As this grain free
zucchini banana bread is quite soft, toasting in the
pan just makes for easier handling all round.

I know... I threw a curve ball there but I needed to make this in a loaf
pan because this one started out
as a traditional
zucchini bread recipe.
I actually threw some fresh cut tomatoes in a non-stick
pan to soften and and threw in the
zucchini pasta
as well then added the pesto by the spoonful till the right consistency.
Remove the
zucchini from the heat and let cool, then transfer half to a food processor with
as much stock from the
pan as necessary to achieve the desired consistency (you may prefer a smoother or chunkier soup).
If at any point during the cooking, liquid starts to accumulate in the
pan as it cooks off of the
zucchini or mushrooms, carefully pour the liquid off.
Both low - carb snacks and gluten free, pizza
zucchinis make the perfect healthy choice to satisfy cravings or
as a quick and easy one -
pan dinner solution.
Fresh
zucchini will often lose moisture
as the
zucchini pasta cooks so be sure to drain any liquid that has built up in the
pan.
