Diane, I love
spanakopita but have always been intimidated to make it because of all the work.
So off I went in search of «easy»

spanakopitas but the leftovers were great for lunch.
I've attempted homemade phyllo dough and made
spanakopita but it was so labor intensive.
I use leftover cooked greens for sort of a quick
spanakopita — dock some puff pastry, add a layer of greens, sprinkle with some parmesan, top with another sheet of docked puff pastry, seal the edges and bake for about 20 minutes or so at 400F.
I had some great feta in the fridge and ever since I starred a few

Mom was enthusiastic about trying out recipes from the book together, so she helped me assemble and cook these kale
spanakopita.
For example, for the kale
spanakopita, I was to cook the kale filling, wrap and bake the phyllo cigars, prepare the harissa sauce, and finally make a mint oil to use for garnishing the harissa sauce.
You do not need to thaw
the spanakopita before baking.
