Have the
pancakes with a side of fresh fruit and if you like some coconut
yoghurt and maple syrup.
Put to the side and serve the
pancake up on a plate, slather
with the
yoghurt and top
with the goji berries, bee pollen, seeds, banana and the remaining maple syrup.
Before I cut the sugar, my breakfasts often consisted of gluten free cereal, fresh fruit and coconut
yoghurt, sometimes paleo toast
with avocado and almond butter, sometimes eggs (but mostly in the weekend), and sometimes
pancakes!
The
pancake is quite big so we'd cut it into quarters and topped
with Greek
yoghurt and fresh sliced peach — I don't think that's how Cypriots serve the
pancake, but the flavours worked well together and we turned it into a great dessert.
I love to serve these
pancakes with curry, as a quick lunch on their own or dipped into some greek
yoghurt.
I love
pancakes with fruit and
yoghurt but always wanted to make the actual
pancake healthy.

Serve the
pancakes hot
with coconut
yoghurt and a sprinkle of cinnamon, and if you're not on a no sugar diet by all means drizzle over some pure maple syrup too!

Place your cooked
pancakes onto a plate and spread a layer of plain
yoghurt on top then fill
with fresh fruit.
Add a good sized dollop of
yoghurt on top of the
pancake and follow
with the blueberries.
Serve the
pancakes warm
with yoghurt (non-dairy to keep it vegan), sliced fruit, maple syrup, and maybe some extra chocolate chips too!
