For these muffins extra virgin olive oil instead or coconut oil will work great, as will omitting the agave but unfortunately the dates are a really big
part of the recipe so I don't know if you can replace them.
Perhaps it's best to use rice flour or another type of gluten - free flour so I will change that
part of the recipe so it's not confusing to anyone else.

so its
