I decided to make use of my recent sprouted
pastry dough recipes and make mini raw vegan peach pies.
I used
the pastry dough recipe attached to this one and it was so flaky and good.

This
recipe is for 1 tube of crescent roll
dough or 8
pastries, but I highly recommend making a double batch since no one consumed less than two.
Slightly unusual, Caroline's
recipe uses yeast, which makes the topping super-puffy, almost halfway between a flaky
pastry and a danish
dough.
The real time saver is that this
recipe uses puff
pastry instead of the phylo
dough.
The

Every puff
pastry recipe I have ever seen suggests marking the
dough, but they don't seem to ever make clear that you have to mark it anew with each turn.

I normally love working with
pastry dough, but as the comments in the post for this
recipe shows, the
dough for these was a nightmare.
That's because most of the
recipes do not result in a workable, yet still flaky,
pastry dough.
If you have another mold other than two listed above, adapt your
recipe using the one to one ratio for the filling and the
pastry dough.
As «village
dough» is a little bit difficult to find, you can either make this traditional Greek leek pie
recipe using either commercial phyllo
dough, puff
pastry or, if you are feeling adventurous enough, make your own homemade phyllo with this easy
recipe for homemade phyllo for beginners.
There are of course many, many baked good
recipes, including Buttermilk Biscuits, Pizza
Dough, Whole Grain Sandwich Bread, Scones, Danish
Pastries, English Muffins, Pop - Tarts, Crusty French Baguette, Challah (pictured below), and the list goes on.
Made this
recipe for the fourth time tonight and used whole wheat
PASTRY flour instead of all - purpose whole wheat and the consistency of the
dough was so much better, just like ordinary cookie
dough!

This authentic filo
recipe is a bit more work than the Easy Filo
Dough also featured, but the paper thin
pastry that results is incredibly light, buttery, and flaky.
