Make a phyllo (filo)
pastry ring about four inches or so in diameter, by wrapping the dough around the handle of a wooden spoon; push off the pastry and wrap in a circular position, so it looks a bit like a large donut with a hole.

Cut out dough using a 2 1/2 - inch doughnut cutter or
pastry ring or drinking glass and using a 7 / 8 - inch (22 mm) ring for the center whole.
For an Electric Range: If heating on the stovetop, select a circular ring of metal, such as a tart pan with a pop out bottom,
pastry ring, or wok ring, and place it on the burner.
