I made this with carrots instead of squash and instead of coconut milk used a bit of stock and half a block of creamed coconut so it was more of a spicy carrot
puree on the sweet potato (and substituted the chick
peas for green
peas plus
added some spinach) and it was delicious.
Add half the
peas to a food processor with 4 tablespoons of olive oil, juice of 1 lime, some salt and pepper to taste and blend to a
puree
Place
peas and broth in blender or food processor and
puree until smooth (the
peas and broth will fill your blender almost to the top, so you can blend them half the amount at a time, if you prefer — you'll need to do this, too, if you are
adding extra broth to make a thinner soup).
Add puree back to pan, and mix with reserved
peas, if taking that option.
You can make a chunky, alternative version of this soup by
adding the split
peas after
pureeing the rest of the ingredients.
** You may also
add items such as
pureed (or small diced & soft cooked) broccoli, carrots,
peas etc... makes great finger food.
Add the beans, broth, olive oil and soy sauce and
puree until mostly smooth (a few pieces of bean are okay, but they should be no bigger than a
pea).

Mint is a great way to both freshen up a

Add a starchy vegetable such as carrots, corn, potatoes, pumpkin,
peas to your
pureed soups which help with consistency and thickness.

pea mixture using a stick blender or mashing with a fork until you're happy with the texture.
Add pureed peas, green beans and carrots, low fat yogurt, apple, blueberries & extra virgin olive oil.
