They are super simple,
just PB, sugar,
egg and salt (if the PB is unsalted) and they work better with the «natural» style
peanut butter than with the creamy - typical sweetened - hydrogenated Skippy - Peter Pan type.
Just a few ingredients — whole wheat flour, oats,

egg, chicken broth, a banana, and nonfat dry milk.
Melt
peanut butter and
butter together until
just melted and set aside, add milk and
egg to dry ingredients with a large spoon or rubber spatula until
just mixed, add vanilla and

butter mixture and mix well.

Modifications were: - used traditional oats because I didn't have quick cook,
just gave them a quick zap in the Nutribullet and kept 1/4 cup unground for texture - omitted hemp seeds because I don't have those - unsweetened applesauce instead of bananas (love bananas but wanted my blueberries to have center stage)- I'm not vegan so I used 2 medium
eggs - replaced 1 tbsp
peanut butter with mayo (love
peanut butter but not necessarily mixed with other flavors)- threw in maybe 1/2 tsp chia seeds
just for grins Baking time was right around 35 minutes in a 8 × 8 Pyrex baking dish and I left them to cool all day and cut them into 9 bars this evening.
I decided a flaky crust would do the trick (http://www.epicurious.com/recipes/food/views/Flaky-Cream-Cheese-Pie-Crust-101857) instead of the original wafer crust... I also added an extra whole
egg yolk to the recipe and a heaping 1/3 cup of
peanut butter just so as to even out with the flaky crust... mmmMMMMM!
If I hadn't already made
peanut butter eggs, I would run to the kitchen and make these right now — but I'll
just pin them for later instead.
In a medium bowl using an electric mixer, combine
peanut butter, honey,
eggs, and vanilla extract
just until smooth.
I tried the ones that I have seen with
peanut butter / almond
butter but those are
just too sweet and the combo of
egg and
peanut butter just didn't go well for me.
For example, instead of
just toast for breakfast, add some
eggs or
peanut butter.
I
just feel so guilty for not eating enough but what I do eat has protein and healthy fat (hotdogs,
eggs,
peanut butter, bread) plus I take a multivitamin.
