We know how much you love our energy ball
recipes on our blog and in our deli, and we also know you can't get enough of
peanut butter.
You don't see most of what I eat online and most of my meals are far from beautiful, I often eat quick cook porridge for dinner, jars of
peanut butter with a spoon for breakfast, tubs of hummus with slightly stale rye bread
on the tube for lunch and a few too many trays of not - quite - right brownies when I'm
recipe testing.
This is an easy

I'm very proud of this creation because, like with the Banana
Peanut Butter Bites (shared
on my weight - loss blog), it's all my own — I didn't even do an internet search for
recipe inspiration before throwing it together.
How these sweet babies came to be: A looooong time ago, I went
on a hunt for a grain - free
peanut butter cookie
recipe.
I was inspired by Sam's
recipe on Pass the Challah, but I knew I wanted a cookie
recipe that used flour just because Aldo preferred those (I actually LOVE the more intense
peanut butter taste of the 3 - ingredient cookies from Sam's blog.
I first made these energy balls back when I was creating this Oatmeal
Peanut Butter Cookie Dough «Blizzard» (which is one of my favorite
recipes on this blog).

This
recipe would be absolutely perfect for making up a big batch
on Sunday and portioning into individual servings for a dynamite breakfast during the week — just prep through stirring in the
peanut butter and honey and add your toppings right before eating.

peanut butter or chocolate or strawberry filled cookies so I am going to be
on the hunt for the peppermint oreos now Hope to find it soon though because I would love to try out this

When cookies are cooled, spread
peanut butter mixture over the top of cookie - I've seen
recipes that give you an amount - but since these are homemade and if you LOVE
peanut butter - pile it
on - but no more than 2 tsp.

But it was a half day at work, and there were some brown bananas

peanut butter, Organic Valley cream cheese, and kosher salt per the
recipe's measurements (but no sprinkle of salt
on top).
