peanut half canola Kosher salt and Freshly ground black pepper 2 eggs (optional, I omitted this to keep mine vegan) 1 (15 - ounce) package firm or extra firm tofu, water pressed out and diced * 1 red onion, thinly sliced 6 cloves garlic, finely minced 2 cups carrots, cut into matchsticks 2 cups bean sprouts 6 scallions, sliced Other optional veggies: I added a cup of sliced white mushrooms, but broccoli, peapods, or any others you like would work as well 4 tablespoons Pad Thai
sauce, more to taste ** 1/3 cup
peanuts, chopped 1/4 cup cilantro, chopped 1 lime, cut into wedges * you could alternatively use chicken or shrimp if you're not a tofu fan ** I used a jarred pad thai

I made an utterly mouthwatering dinner today based on a
recipe on The First Mess (spaghetti squash noodle bowl with lime
peanut sauce), although I swopped out the squash for what I had
in the house (orange sweet potatoes and carrots).
There is a definite Indian influence
in the marinade we used for the Daring Cooks»
recipe (hello cumin and coriander), but the
peanut coconut
sauce recipe is probably closer to what you'd find
in Thailand.
Anyway, wanted to tell you that I've started subbing out the grapeseed oil for coconut oil
in these and have long been using homemade coconut palm sugar syrup
in place of agave
in ALL of your
recipes, including your
peanut sauce and other similar ones.
Almond butter is also great
in your favorite smoothie or curry
sauce, and is a substitute for any cooking or baking
recipe calling for
peanut butter.
(Did all the prep / marinating as the
recipe called for and just cooked it
in the skillet instead of on the grill — no skewers) The marinade was well balanced and the
peanut sauce was to die for.
