I have been making this Homemade Pesto recipe lately on a weekly basis to go over pasta, served alongside grilled chicken or shrimp or as a topping to fresh salmon.

Over the past week, I have been busy in the kitchen, cooking staples like my favourite seeded loaf, our Thai - inspired chicken, pesto pasta and cereal bars.

Pesto is one of those wonder ingredients that can be combined with chicken, vegetables or eggs to add instant flavour that will make you literally fall in love with savoury food over and over again.

I actually had SO much leftover pesto that I ended up making a simple sauce with it using crushed tomatoes and a little salt / pepper while everything baked to spoon over the chicken.

This pesto was so fresh and tasted delicious draped over baked, sliced chicken breasts.

I'd also go with the Rainbow Five - cheese Tortellini and toss it with basil pesto, pine nuts and chicken that has been pan-sauteed in olive oil and garlic with some dry white cooking wine poured over it once it's done cooking.

Once dough is shaped, spread 2 ounces of the pesto on it, then add a layer of fresh spinach, thinly sliced sliced chicken, toasted pine nuts, 1 ounce Asiago cheese and 1/2 cup of mozzarella cheese sprinkled evenly over the pizza.
