But the very best thing you can do
with it (besides freezing it and being delighted by it every single time you open the freezer, if you're like me) is to make turkey
pho.
I've been wanting to recreate vegan
pho ever since trying a version
with smoked tofu at a restaurant a couple of months ago.
Pho is essentially a very flavoursome clear soup served
with flat rice noodles, slices of chicken (ga) or beef (bo), spring onions, bean sprouts, fresh herbs, chilli's and lime.
There were morning cheese tastings, waffles,
pho, mocktails, more ice cream, pasta pasta and more pasta, and late night games of Gin Rummy over whiskey listening to Bessie Smith
with the fan on full blast.
Love your version of Veg
pho — although the fish sauce can be replace
with liquid aminos for those of us who are veg.
However next time I plan to experiment
with making a more authentic
Pho stock first.

Pho soup is based on a slow - simmered stock flavored
with a variety of spices that give it a very distinctive flavor, whereas I just used my everyday chicken stock.
Pho (pronounced «fa» not «fo») is a Vietnamese noodle soup usually made
with rice noodles and a flavorful broth, but this simple version substitutes zucchini noodles instead!
After spending a month in Vietnam in 2012 I fell in love
with the cuisine and especially the national soup —
Pho.
I also love this Vietnamese tofu
pho (you can swap out the rice noodles for zucchini noodles if desired) and this hearty Thai Tom Kha soup loaded
with ingredients like coconut milk, chilis, ginger, lime, and veggies to help you ward off any cold.
The
pho also comes
with tofu springs rolls.

pho recipe, I was looking for a creative way to use my freshly made turkey stock, as well as some of the leftover meat from Thanksgiving.
If you are not familiar
with it,
pho is a traditional Vietnamese soup that is usually made from a long - simmered beef stock that is enhanced
