picadillo meat when we first started dating.

Picadillo, on which this recipe is loosely based, is a
meat and potato hash of sorts that's traditionally made with ground pork or beef or sometimes both.
Here in Spain they have Sopa
Picadillo which comprises Chicken stock with
meats (chicken, serrano ham trimmings, etc), hard boiled egg (chopped), and a starch (potatoes or croutons or fideo pasta), with various chopped herbs afloat in the soup.
She's also made
picadillo, a stewed ground beef dish, with Beyond
Meat pea protein, and slow - cooks shredded firm tofu in barbecue sauce for her take on pulled pork.
When ready to serve, reheat the
meat filling (
picadillo), then stuff the chiles with it until plump and just barely closed.
One pot wonder, the original dish uses a combination of ground
meat, lots of vegetables, sometimes you can find sweet
picadillos for chiles en nogada, or like this version wich is the homestyle spicy chipotle version.
