picadillo with lentils all the time and use it as a sope filling..

Picadillo.
The
picadillo is flavorful, hard to mess up even when swapping out ingredients and changing amount of any given ingredient — it freezes well, can serve
with noodles or rice, over garlicky Texas Toast, cornbread, wrapped in a flour tortilla, or by itself (we have an Atkins dieter in our midst who enjoys it straight up).
Put a bed of collard greens on the bottom of two shallow bowls and top
with some of the
picadillo; pass the lime wedges at the table.
It took me a while to getting around to actually making some vegan
picadillo, because I was a little confused as to what to do
with it.
This vegan
picadillo is made
with spiced lentils simmered up
with juicy tomatoes, bell peppers, sweet raisins and pimento - stuffed green olives.
When ready to serve, reheat the meat filling (
picadillo), then stuff the chiles
with it until plump and just barely closed.
I got the idea after seeing Yvette's
Picadillo - Stuffed Zucchini and my mind instantly went to another lamb - stuffed eggplant dish that I made from Yotam Ottolenghi's Jerusalem cookbook last summer (
with the eggplants that actually grew).
If the «
picadillo» filling seems like too much for you, the poblano peppers can also be filled
with cheese, canned tuna, chicken, refried beans or vegetables.
Picadillo served
with rice is one of my family favorite meals.
